 Ole’, Ole’, Ole,” Ole’, Ole”, Fiesta Chicken Nachos are just what you need for Superbowl Sunday!  I love watching football, and nachos are the perfect snack while rooting your favorite team on.  Fiesta Chicken Nachos are so easy to make and even more satisfying to eat.  They are fit-fabulous, loaded with lean protein, heart healthy fats, fiber and have just the right amount of kick to keep those vocal cords yelling.  The fiesta sauce on these nachos is the game changer.  It’s smooth and creamy with a pop of heat that adds the “fiesta” to these Nachos.  It brings such a good flavor to the nachos, you will find yourself going back for more.

I made these Fiesta Chicken Nachos for my family for the college football marathon that always seems to take place every Saturday, and they loved them.  Hot out of the oven these Fiesta Chicken Nachos are seriously worth making.   The guacamole and dollop of plain greek nonfat yogurt tone down the spice, if you can’t take the heat.  Nachos are such a party food and seem to be loved by all ages.  I know these are going to be a must for our Super Bowl Sunday and I can hardly wait to make them again. xoxo

 

 

Fiesta Chicken Nachos

Nachos
  1. 1lb lean ground chicken
  2. 1/4-cup red onion, finely chopped
  3. 18oz bag of blue corn chips ( or chips of choice)
  4. 1/2-can of black beans, drained
  5. 1-10oz can diced tomatoes and green chilies, drained ( I use Ro-Tel)
  6. 1-cup weight watchers Mexican shredded cheese (or reduced fat shredded Mexican cheese)
  7. 1/2 avocado, diced
  8. 1/4-cup sliced green onion
  9. 2-tablespoons fresh cilantro, chopped
  10. Optional toppings: plain nonfat yogurt, guacamole, and olives.
Fiesta Sause
  1. 3-tablespoons light Ranch dressing
  2. 1-teaspoon Sriracha-add more or less for desired level of heat
  3. 1-teaspoon water
  4. 1-teaspoon reduced soduim taco seasoning mix
Lets Cook
  1. Preheat oven to 350 degrees F
  2. Cook ground chicken until no longer pink, drain, set aside.
  3. Whisk ingredients for Fiesta Sauce in a small bowl and set aside.
  4. In a ceramic or glass dish spread chips on bottom.
  5. Add cooked ground chicken.
  6. Add black beans and red onion.
  7. Add chopped tomatoes/green chilies.
  8. Sprinkle with a generous amount of Mexican cheese.
  9. Bake at 350 for approximately 20 minutes, until cheese is melted.
  10. Remove from oven and top with avocado, green onion, and cilantro.
  11. Pour Fiesta Sauce over entire dish and add additional toppings of your choice (plain nonfat yogurt, guacamole, olives).
  12. Serve immediately and enjoy..OLE xoxo
