Let me give you the “skinny” on these Skinny Key Lime Cheesecake Bars! They are like biting into key lime flavored cotton candy without all the sugar. They are the perfect dessert when you have saved just enough room for something after dinner without putting yourself into a food coma. I loved them, and so did my friends and family over Father’s Day.

I think lime is such a refreshing flavor for the hot summer months and without adding a ton of sugar the lime flavor doesn’t overpower the taste. There might be a little hidden ingredient.. (fat free cottage cheese) no one will even suspect is there, but it gives the cheesecake a lite, delicate consistency without being too heavy.

Ingredients
  1. 6-squares low-fat honey graham crackers, finely crushed (1/2 cup)
  2. 2-tablespoons margarine, melted
  3. 1-teaspoon sugar
  4. 1-4 ounce package sugar-free low-calorie lime-flavored gelatin
  5. 3/4-cup boiling water
  6. 16-ounce container fat-free cottage cheese (1-3/4 cups)
  7. 1-8 ounce container 1/3 less fat cream cheese, softened
  8. 1-8 ounce container frozen fat-free whipped dessert topping, thawed
  9. Key Limes or limes, cut in wedges (optional)
Instructions
  1. In small bowl combine graham crackers, margarine, and sugar.
  2. Press crumb mixture in the bottom of a 8X11 baking dish. Refrigerate while preparing filling.
  3. In large bowl combine gelatin and water. Stir until gelatin is dissolved. Set aside.
  4. In blender or food processor combine cottage cheese and cream cheese. Cover and blend or process until smooth, stopping several times to scrape down sides.
  5. Whisk 1/2 cup of the cottage cheese mixture into the gelatin mixture.
  6. Whisk in remaining cottage cheese mixture until smooth. Fold in whipped dessert topping. Spoon filling over chilled crumb mixture.
  7. Cover and refrigerate 8 to 24 hours or until filling is firm. To serve, cut in squares. Top with lime wedges. Enjoy!
