I scream, you scream, we ALL scream for cookies!  Vegan Thumbprint Cookies, that is.  I don’t even know where to begin when trying to describe these Vegan Thumbprint Cookies.  Every year at Christmas time I always looked forward to the most delicious thumbprint cookies, but they only came out at Christmas.  I remember how soft on the outside and gooey on the inside they were.  Well after making these Vegan Thumbprint Cookies all those gooey memories came rushing back to me.  And what is even better, I can make Vegan Thumbprint Cookies anytime of the year.  I used sugar free raspberry jam to fill each soft and nutty thumbprint cookie, and topped it off with a fresh raspberry.

The big test came when I had my 6 year old nephew and 5 year old niece (who are very particular about what they allow me to feed them), ate them up without any questions and topped it off by licking their fingers clean.  Vegan Thumbprint Cookies are so fast and easy to make that you will need to double the recipe because this fit-fabulous treat will leave a thumbprint in the brain for more. xoxo

Vegan Thumbprint Cookies

Ingredients
  1. 1-cup of pecans
  2. 1-cup rolled oats (NOT quick cooking oats)
  3. 1-cup whole wheat pastry flour
  4. 1/2-cup canola oil
  5. 1/2-cup maple syrup
  6. 1/4-tsp sea salt
  7. 1-jar of Jam of your choice (sugar free of fresh preserves)
Lets Cook
  1. Preheat oven to 350
  2. Put pecans, and oats in a food processor or blender and pulse until coarsely ground.
  3. Transfer to a large bowl, and add flour, oil, maple syrup, and sea salt.
  4. Stir to combine well.
  5. Roll small sized ball of dough in the palm of your hand to form each cookie, then arrange on cooking sheets 2 inches apart.
  6. Press your thumb gently down on the center of each cookie to make an indentation.
  7. Spoon a teaspoon of jam into each indentation.
  8. Bake cookies for 15-20 minutes until golden brown and edges just firm.
  9. Let cook briefly on cookie sheet then transfer to cooling rack. Enjoy!
