Coco-Nut Fit Bites are absolutely, hands down my new favorite snack. They are so easy to make and require very little clean up and NO baking. Each Coco-Nut Fit Bite is full of healthy ingredients and make the best grab and go treat that really satisfies.

The first time I had these adorable little Coco-Nut Fit Bites was when I was in Arizona with my amazing friend Nicole.  She whipped these up for my husband and I and we were hooked. I couldn’t believe how easy they were to make and it was all done in one kitchen appliance, the food processor (those things are amazing).  I love recipes that can all be thrown in together without the chance of messing things up.  Just toss everything in, mix, pulse and wha la!  All the ingredients mix so well and allow you to pack and roll these little cuties into fit-fabulous bites.  Coco-Nut Fit Bites have the most amazing blend of coconut, maple syrup,  and vanilla, with the perfect amount of sweet and crispy chewiness all packed into one bite of healthy goodness.

Coco-Nut Fit Bites
Serves 12
An easy and healthy no bake snack that is simply delicious.

Ingredients
  1. 2-Tablespoons ground flax seed
  2. 1-cup of oats
  3. 1-cup of pecans
  4. 1-cup raw coconut
  5. 2-cups pitted dates
  6. 1-Tablespoon coconut oil
  7. 1/2-Tablespoon pure maple syrup
  8. 1/2-teaspoon salt
  9. 1-Tablespoon vanilla
  10. 1/2-cup rice crispy cereal
Instructions
  1. Grind oats in food processor for 30 seconds.
  2. Add in pecans and coconut and mix.
  3. Add in dates, coconut oil, pure maple syrup, salt, and vanilla and mix.
  4. Add in ground flaxseed and mix.
  5. Add in rice crispy cereal, but only pulse a few times, don't mix
  6. Roll into round balls and put on a cookie sheet lined with parchment paper, place in freezer for 1/2 hr, eat and enjoy!
